The upcoming International Symposium on Food Rheology and Structure (ISFRS) is scheduled to take place from June 11-15, 2023. This conference will be hosted by the Laboratory of Physics and Physical Chemistry of Foods, Department of Agrotechnology and Food Sciences at Wageningen University, in collaboration with the Institute of Food, Nutrition, and Health at ETH Zurich.
The symposium aims to explore various aspects, including the rheology of food and related systems, analysis of food structure, and the intricate relationship between food processing, structure, rheology, and resulting food quality.
